Whelp this salad is amazing! This would make a perfect addition to your holiday menu. Your guests will love it! I promise! It’s super easy to make and you only need one pan. My favorite kind of meal.
Just be sure if you do plan on making this for your holiday meal or any meal make sure this is the last dish you prepare. Otherwise, the kale will get soggy and wilt.
Also, when cooking the kale be sure to mix frequently. It will turn the kale a beautiful dark green color. Remove from heat before it starts to wilt.

Ingredients
- 3 strips of bacon, chopped
- 1/2 small onion, diced
- 2 tablespoons balsamic vinegar
- 5 Medjool dates, chopped
- 1/4 cup chopped walnuts
- 2 buch of kale, stems removed and chopped
Instructions
- In a large skillet heat 1 tablespoon of oil over medium heat. Add chopped bacon and saute for 2 minutes. Add diced onions and saute for another 2 minutes.
- Add balsamic vinegar, chopped dates, and walnuts and stir. Add kale and gently mix for about 3 minutes or until kale turns a dark green, but before it wilts.
