This is my first attempt at making gumbo and I think it turned out pretty darn good! I had originally made this recipe for Simply Organic’s Cajun style recipes and I just had to to share it with y’all. I made this recipe using chicken and sausage, but I think shrimp or ham would also make a delicious addition.

Fiery Shrimp Jambalaya
Hope y’all had a fantastic holiday! We sure did! It was nice and quiet this year with just my little fam and some friends from out of town. We got one tree up and the outside of the house decorated for Christmas. So we were productive too. Yay us!
Chicken Kale Caesar Salad “In a Jar”
Salad in jar… Why have I never made these before? They are so easy to make! I made a Chicken Caesar Kale Salad, but any type of your favorite salad would work. I have always kind of steered away from using kale in a salad. I always found it kind of bitter. But after I made this Kale, Strawberry and Avocado Salad, I learned that squeezing a lemon over the kale first and then massaging it with your hands turns the kale a bright green. This helps get rid of that bitter taste.
Chicken Quinoa Enchilada Bake
I know, I know, I have yet another quinoa recipe. I bought this huge bag at Costco and I haven’t even made a dent in it. Good thing the fam loves the stuff! Annnd it just so happens to be Cinco De Mayo next week so I was thinking Mexican.
This is an awesome week night recipe and leaves plenty of leftovers for lunch the next day. And my favorite part is I only used one pan for this dish! I have mentioned before how much I loooove my Lodge cast iron skillet, but it truly is one of my favorite pans. It’s inexpensive, durable, and goes from stove top to oven.
Back to the Enchilada Bake… The recipe is pretty basic so feel free to add any of your favorite toppings!
- 1 cup quinoa, cooked according to package directions
- 1 small onion, diced
- 1 sweet pepper, diced
- 1 clove garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 lb chicken, cut into bit sized pieces
- 2 cups enchilada sauce
- 1/2 cup cheddar cheese
- Optional Toppings
- diced avocado
- diced tomatos or salsa
- green onion
- cilantro
- greek yogurt
- jalapeño peppers
- Preheat oven to 350 degrees.
- In a large skillet heat 1 tablespoon of oil over medium high heat. Add diced onions and peppers and sauté for about 3 minutes.
- Add minced garlic, chili powder, cumin, and chicken. Saute until chicken is cooked and not longer pink about 8 minutes.
- Add cooked quinoa and enchilada sauce and mix until combined. If you have a oven proof skillet top with cheese and bake for about 10-15 minutes until cheese is melted and bubbly. If you do not have an oven proof skillet and mixture to a lightly greased casserole dish, top with cheese and bake.
Sriracha Chicken Quinoa Bowl
I have a confession to make… I am obsessed with Sriracha sauce. There, I said it! I love it! I can’t get enough of it! In fact I am eating it on my eggs right now. And I can’t wait to eat it again for lunch because I have this delicious dish leftover from last night 🙂
Well this probably one of the best dinners I have made in awhile and it seriously took me about 15 minutes to make!
Lasagna Soup
Spring is right around the corner! Thank goodness! This winter seems to be taking extra long to be rid of. Although we have had a few unseasonably warm days here in Dallas, I am ready to pack away my boots and get out my flip flops and start grilling! But for the mean time I will make soup. Not just any soup, but lasagna soup!
Thai Cashew Chicken Salad
You can never have too many chicken salad recipes in my book. I don’t really care for mayo so this is a great change up to the traditional chicken salad recipe. Plus, I loooove the combination of flavors in thai recipes.

Cioppino (Seafood Stew)
For Father’s Day I made my husband his favorite dish, Cioppino. Cioppino is a seafood stew originating in San Francisco.
It’s an Italian-American dish and is typically made with the catch of the day. Or in my case whatever is on special and looks good! I decided on mussels, calamari, cod, shrimp, and crab.
