Zucchini Lasagna
These past month has been absolutely crazy! We spent a wonderful few weeks back in the Northeast with our family and friends. We got in tons of beach time, amusement parks, lunch dates, dinners, cocktails, a wedding, and bbq’s. It really flew by in a blink of an eye. Time does sure fly when you are having fun! Hope y’all had a wonderful summer! Continue reading Zucchini Lasagna →
Baked Orange Chicken Meatballs
Skip the Chinese takeout and make these yummy Baked Orange Chicken Meatballs! These meatballs are baked in a mini muffin pan which makes these little guys super easy to prepare.
Lightened Up Sheperd’s Pie
So this recipe is totally a day late! Ugh, with Spring break last week and and life’s daily craziness I could not get it together to share this recipe with you before St. Patty’s day. Sorry friends! Just because St. Patty’s day is over doesn’t mean you can’t make Sheperd’s Pie!
Broccoli and Cheese Soup
I originally made this Broccoli and Cheese Soup recipe for my blog over 2 years ago. Yikes! Boy does time fly! I have been going through my recipe archives lately and some of them are have serious need for updating. While the recipes are great the photos are blahhh. I have come a long way in my photography, but I still have lots more to learn.
Cauliflower Chowder
We have been so spoiled here in Dallas with a very mild winter. And then just like that it’s freezing cold, with ice and snow.
I know, I know I should not be complaining (my Northeast friends will agree), but it is true, you do get “soft” when you are not used to cold weather. I am freezing!!! So what do you do when you are freezing? You make chowder! Continue reading Cauliflower Chowder →
Sweet Potato Hash Brown Cups
I’m sure by now you have all figured out that I love to make foods in a muffin pan. They look so darned cute and usually, and I use that term loosely, helps me with portion control. Umm, let’s just say these hash browns got totally out of portion control! I could not stop eating them!
Creamy Cauliflower Casserole
The easiest casserole recipe you will ever make. Even if you don’t care for cauliflower this recipe will change your mind!
Blackened Chicken Gumbo
This is my first attempt at making gumbo and I think it turned out pretty darn good! I had originally made this recipe for Simply Organic’s Cajun style recipes and I just had to to share it with y’all. I made this recipe using chicken and sausage, but I think shrimp or ham would also make a delicious addition.
Fiery Shrimp Jambalaya
Hope y’all had a fantastic holiday! We sure did! It was nice and quiet this year with just my little fam and some friends from out of town. We got one tree up and the outside of the house decorated for Christmas. So we were productive too. Yay us!
