Cauliflower has to be the most versatile vegetable I have ever cooked with.
A few months ago I made Loaded Baked Potato soup and no one in my family realized it was full of cauliflower until I told them. If you have picky eaters I would definitely keep that one a secret!

Ingredients
- 2 heads cauliflower, washed and chopped, stem discarded
- 1 package Simply Organic Ranch Dressing Mix
- 1 tablespoon butter
- 3 tablespoons green onion, chopped
Instructions
- In a large pot, bring 6 cups of water to a boil. Add cauliflower and boil until soft, about 6 to 8 minutes. Drain cauliflower.
- Add cauliflower to food processor, this may need to be done in batches depending on the size of the food processor.
- Add Simply Organic Ranch Dressing Mix and butter. Process until smooth.
- Add cauliflower to a large serving bowl and top with green onion.
