I have another great recipe idea for your Super Bowl party. Guacamole Stuffed Deviled Eggs! It’s two of my favorite appetizers in one. Score!
You don’t need to be having a party to enjoy these. They also make a great snack!
These are really easy to make and healthy too. There is no mayo in this deviled egg recipe!
Ingredients
- 8 hard boiled eggs, peeled, sliced in half and yolks removed
- 1 ripe avocado, pitted
- 1/2 small red onion, finely diced
- 1/2 -1 jalapeño pepper, finely diced (optional)
- 1 teaspoon red wine vinegar
- 1/2 lime, juiced
- 1 tablespoon fresh cilantro, chopped
- Paprika
Directions
- In a medium sized bowl add 4 cooked egg yolks and avocado. Smash with a whisk or fork until smooth. Add red onion, jalapeño, red wine vinegar, lime, and fresh cilantro. Mix with a spoon,
- Add large spoonfuls to the halved eggs. Sprinkle with paprika.
