No mayo potato salad is a delicious side dish that is perfect for the summer. Let’s face it mayo is no good for you and adds unnecessary calories and fat to your diet. I promise you won’t even miss the mayo in this potato salad. Plus, you won’t feel guilty if you want seconds!
Oh, and I forgot to mention it is super easy to make!
Serves 4. Adapted from Thug Kitchen
Ingredients
- 1 1/2 lbs red or Yukon gold potatoes
- 1/3 cup shredded carrot
- 1/3 cup diced celery
- 1/4 cup dill, chopped
- 1/4 cup chives or green onion
- 1 teaspoon Dijon mustard
- 3 tablespoons white wine or white vinegar
- 1 lemon, juiced
- 2 cloves garlic, minced
- Salt and pepper to taste
Directions
- Bring a large pot of water to a boil and add a pinch of salt.
- Cut potatoes into bit sized pieces and add to boiling water. Boil for about 10-15 minutes, depending on size of cut potatoes. Don’t over cook. You should easily be able to stab with at fork.
- Meanwhile, in a blender or processor mix Dijion mustard, vinegar, lemon juice, and garlic. Set dressing aside.
- Drain potatoes and let them cool for a few minutes. Add carrots, celery, chives (or green onion), dill, salt, and pepper. Mix well. Refrigerate for at least 30 minutes.
