Yay! It’s the first day of summer! My favorite season. I love flip flops and sun dresses, the beach, gardening, and just being outside.
Summer also means lots of cookouts and picnics. We like to entertain a lot in the summer so I am always trying to come up with different menu ideas.
This melon salsa is a keeper! It makes a great topping for fish, chicken, shrimp, or scallops.
It would also taste great served as an appetizer with tortilla chips or alone as a side dish. Melon salsa is not only refreshing, but super easy to throw together.

Ingredients
- 4 cups watermelon, honeydew, and/or cantaloupe, diced
- 1/4 cup red onion, diced
- 1 tablespoon jalapeƱo, diced (add more if you like it spicy)
- 1 lime, juiced and zest
- 1 tablespoon fresh cilantro, chopped
- 1 tablespoon fresh mint, chopped
Directions
- In a large bowl mix all ingredients. Let flavors combine in the fridge for about 30 minutes.
