How cute are these for fall? Although I am not quite ready to except the fact that summer is almost over, I do enjoy fall. Especially all of the foods that are popular for fall. One word…Pumpkin!
These meatloaf cupcakes are super easy to make and reheat wonderfully. I piped the sweet potato mash with a pastry bag to make them look pretty, but you could easily use a spoon or an ice cream scooper.

Ingredients
- Ingredients for the Meatloaf
- 1 pound ground turkey
- 1 cup zucchini, shredded
- 1/2 small onion, diced
- 1/2 cup panko breadcrumbs
- 1/4 cup ketchup
- 1 egg
- Salt and pepper to taste
- Ingredients for the Mashed Sweet Potatoes
- 1 pound sweet potatoes, peeled and cubed
- 1 tablespoon butter
- 2 garlic cloves, minced
- 2 tablespoons sour cream or Greek yogurt
- 1/2 cup milk of your choice (I used an almond/coconut blend)
- Salt and pepper to taste
Instructions
- Starting with the meatloaf, preheat oven to 350 degrees. Line muffin tin with liners and set aside.
- In a large bowl add the ingredients for the meatloaf and mix with your hands until combined.
- Place mixture into muffin tin and make sure they are flat. Bake for 18-20 minutes.
- Moving on to the Mashed Sweet Potatoes, bring a large pot of water to a boil and add cubed sweet potatoes. Boil for about 15-20 minutes or until soft.
- Drain sweet potatoes and add to a large bowl. Add the remaining ingredients for the mashed sweet potatoes and mash with a potato masher or use a mixer.
- Top baked meatloaves with mashed sweet potatoes I used a pastry bag, but a spoon or ice cream scoop would work.
