Thanksgiving is right around the corner! Time to start planning those menus.
While most Thanksgiving dinners are loaded with calories, I am trying to lighten up my menu. Well, these mashed sweet potatoes are delish and make a perfect side dish for Thanksgiving! I promise you won’t miss the ones with the marshmallows on top. I never really liked those anyway.
I can’t take the credit for this recipe. My coach from my gym brought them to our pot luck Halloween party. They were a hit so I had to share.

Ingredients
- 2 large sweet potatoes
- 3 tablespoons organic grass fed butter
- 1/4 cup orange juice
- 1/2 lime, juiced
- Salt and pepper
- 1 tablespoon fresh cilantro, chopped
- 1/4 cup walnuts
Directions
- Pre heat oven to 350.
- Pierce sweet potatoes with a fork and bake until tender. About 45 minutes. Peel skins and discard. Place into a medium size bowl.
- Add 2 tablespoons butter, orange and lime juice, salt and pepper. Mix with an electric mixer until smooth. Stir in fresh cilantro.
