So this recipe is totally a day late! Ugh, with Spring break last week and and life’s daily craziness I could not get it together to share this recipe with you before St. Patty’s day. Sorry friends! Just because St. Patty’s day is over doesn’t mean you can’t make Sheperd’s Pie!
This recipe is lightened up by using a cauliflower/potato mash for the topping. You could eliminate the potatoes all together if you choose. I like the extra creaminess the potatoes add to the mash, so it is completely up to you. I also loaded this dish with lots of fresh herbs which adds a ton of flavor, so don’t skip out on those!
Hope y’all had a great St. Patty’s day! I was lame and went to the gym, but I did enjoy a Guinness after my workout!

I’m very excited to try this. It’s one of my favorite meals and I would love to be able to enjoy this light version instead of missing out. Thank you!
This looks really yummy! I think I’ll roast the cauliflower, then roughly hand mash it. Got any tips for making healthy gravy?
