Ahhh! We are finally getting settled here in beautiful Grapevine, TX. But let me tell you I am pooped! Driving half away across the country, unpacking and getting used to a new area is exhausting. So quick easy one dish dinners it is this week! That I still can’t find my pots and pans…
I used brussels sprouts for this recipe since that is all I had, but almost any veggie combo will work. Next time I am going to use zucchini, yellow squash, and mushrooms.
Not only can you switch up the veggie combo, you can switch up the hummus flavors as well. I roasted red pepper, feel free to use your favorite:)
Recipe from Gimme Some Oven
Ingredients
- 3-4 boneless, skinless chicken breasts
- Salt and pepper1 pound brussels sprouts, quartered
- 3/4 cup hummus
- 1 tablespoon oil, I used coconut
- 1 lemon
- 1 teaspoon smoked paprika
Directions
- Preheat oven to 450 degrees.
- In a large bowl toss brussels sprouts with oil, salt and pepper until coated evenly. Place brussels sprouts on in a large baking dish.
- Salt and pepper both side of chicken and place on top of brussels sprouts in baking dish. Cover the entire chicken breasts with hummus. Squeeze lemon over the chicken and brussels sprouts. Sprinkle with paprika.
- Bake for about 20-25 minutes or until chicken is cooked through.

Made this with artichoke hummus on one side and spicy black bean on the other side. With broccoli and squash. Very yum! Everything I make from your blog is wonderful. Thank you
