Celebrate Cinco de Mayo or your next fiesta with guacamole. Guacamole is a staple in any Mexican dish I prepare, but it is also an awesome, easy dip. I whipped this up in about 10 minutes and we had it as a Sunday afternoon snack.
You may want to double this recipe. As you can tell we couldn’t even make it through the photo shoot, we had to eat it!
Does your guacamole turn brown too fast? Squeeze a lime or lemon onto your guacamole and mix it in to help keep that nice green color.
Ingredients
- 3 ripe avocados (soft to touch)
- 1/3 cup red onion, diced
- 1 tomato, seeded and diced
- 1/2 jalapeno pepper, seeded and diced
- 1 garlic clove, minced
- 1 lime, juiced
- 1/2 teaspoon cumin
- Pinch of salt
- 2 tablespoons of fresh cilantro, chopped
Directions
- Halve avocados and remove seed. Scoop out avocado and place in a large bowl. Mash avocado with a potato masher or a fork. I like mine a little chunky.
- Gently fold in onion, tomato, jalapeno,and garlic. Next add the lime, cumin, salt, and fresh cilantro. Mix until coated. If can stand to wait, let the guac sit at room temperature for 30 minutes to let the flavors marinade. Serve with your favorite chips or veggies!
