I just love making kabobs for dinner. So easy and fun! You can use just about any meat or veggie and it will sure be a crowd pleaser!
I have so much oregano growing in my herb garden I am always looking for recipe ideas to use it.
I found the recipe on Skinnytaste. She used salmon, which sounds amazing, but I had shrimp to use up so I figured I would give it a try. Next time I am going to try the salmon.
I love the combination of the oregano, sesame seeds, and lemon. When placed on the grilled the sesame seeds become toasted and lemon slices get really juicy making them perfect for squeezing onto the shrimp.
Ingredients
- 2 tablespoons fresh oregano, chopped
- 2 tablespoons sesame seeds
- 1 teaspoon cumin
- 1/4 teaspoon red pepper flakes
- Sea salt to taste
- 1 1/2 pounds shrimp, peeled and deveined
- 2 lemons, thinly sliced into rounds
- 2 tablespoons olive oil
Directions
- Soak wooden skewers in water for at least 30 minutes to an hour.
- Preheat grill to medium high heat.
- Mix oregano, sesame seeds, cumin, and red pepper flakes in a small bowl and set aside.
- Beginning and ending with shrimp, thread onto 2 skewers alternating shrimp and folded lemon slices to make about 8 kabobs.
- Brush with olive oil and season with spice mixture.
- Grill for about 8 minutes or until cooked through depending on size of shrimp.
