Right now produce stands are exploding with fresh peaches! I couldn’t resist so I bought a big basket of those beauties. So some recipe creativity was in order to make use of all of these peaches.
Earlier this week I made Grilled Peach and Heirloom Tomato Pasta Salad with Basil Vinaigrette, which was amazing! And last night I quickly threw together this peach salsa and topped it on grilled pork chops.
Delish and simple! Now that is my kind of meal!
Ingredients for the Salsa
- 2 large peaches, diced
- 1/2 red onion, diced
- 1 jalapeño, diced
- 1 juice of a lime
- Handful of cilantro, chopped
- 1 tablespoon olive oil
- Salt and pepper to taste
Ingredients for the Pork Chops
- 2 pork chops, I like the bone in they are much juicier
- Salt and pepper
Directions
- In a bowl combine all ingredients for the salsa and put in fridge. This can be made a day ahead and stored in the fridge.
- Pre heat grill to medium high heat. Grill pork chops for about 5-6 minutes per side depending on thickness.
- Let cooked pork chops rest for a few minutes and then place on a plate and top with salsa.

If I were to big batch of the salsa, is it freezable?
I have not tried freezing the salsa so I’m not sure how it would hold up.
