Hope y’all had a fantastic holiday! We sure did! It was nice and quiet this year with just my little fam and some friends from out of town. We got one tree up and the outside of the house decorated for Christmas. So we were productive too. Yay us!
We are back on track for the next few weeks and I am trying to plan meals for the week. I am I made this fiery shrimp a few months ago and this needed to happen again!
It’s a bowl of fiery goodness and a perfect cold weather comfort food. It’s simple to make and you only need one pot, my favorite! I added some chorizo and chicken, but you could easily leave that out and double the shrimp.

Ingredients
- 1 pound shrimp, peeled and deveined
- 2 tablespoons paprika
- 1 teaspoon cayenne pepper
- 1 teaspoon garlic powder
- 2 celery stalks, diced
- 1/2 onion, diced
- 1/2 red pepper, diced
- 1/2 yellow pepper, diced
- 1/2 pound chorizo, sliced
- 1/2 pound chicken breast, cut into bit sized pieces
- 3 cups chicken broth
- 3/4 cup uncooked rice
- 2 14.5 ounce cans diced tomatoes
- 1 packet Simply Organic Jambalaya Base
Instructions
- In a bowl add paprika, cayenne pepper, and garlic powder and mix. Add shrimp to bowl and gently combine and set aside.
- Heat 1 tablespoon of oil in a large pot over medium high heat. Add peppers, onions, celery and saute for about 5 minutes.
- Add sliced sausage and chicken and cook for another 6-8 minutes or until cooked through.
- Add broth, rice, diced tomatoes and jambalaya packet and simmer. Stir frequently for 15 minutes so the rice doesn't stick to the pot.
- Add shrimp and cook for another 10 minutes.
