As I mentioned in my last post it’s chili month here at Kim’s Healthy Eats. Yay! You can never have too many chili recipes in my book!
This Crock Pot Chili Con Carne is super easy to prepare. I used Simply Organics Chili Packet seasoning, quick sautéed the veggies and beef and tossed it in the crock pot. Easy peasy!
I topped mine with diced avocado and of course I had to add cheddar cheese to top it off.

Ingredients
- 2 pounds beef cubes
- 1 small onion, diced
- 1 red pepper, diced
- 1/2 jalapeno pepper, finely chopped
- 2 garlic cloves, minced
- 3 tablespoons tomato paste
- 2 cups beef or vegetable broth
- 1 14 ounce can of diced tomatoes
- I Simply Organic Chili packet
Instructions
- In a large pan heat 1 tablespoon of oil over medium heat. Add onion, peppers, and garlic. Saute for about 4 minutes. Add beef cubes to brown about 3 minutes.
- To a crock pot add beef cubes, sauteed onions, peppers, garlic, tomato paste, broth, diced tomatoes and chili packet. Mix until combined.
- Cook in crock pot on high for 4-5 hours or on low for 7-8 hours.
- Serve with your favorite chili toppings.
