Italian Grilled Vegetable Kabobs

Just when I thought I couldn’t get enough of my Asian Chicken Meatballs, I go and make these Chicken Parmesan Meatballs. Wowza these are so good! You may want to double the recipe.

Gluten Free Blueberry Muffins
Hey there! I am keeping this post short and sweet as I get through this week of craziness! I started a new job, working on some side work, and packing to move this week… Phew! I am super excited and so thankful for all of these opportunities!
So onto these delicious mini muffins. I made these on Sunday as a quick grabby snack or breakfast for the week. They are grain free and very easy to make with minimal ingredients. Just make sure you store them in an air tight container or they will be hard as a rock. Have a great week all!
Asian Chicken Meatballs
I started my new job this week! On top of running this food blog, my favorite job, I am also a registered CT technologist. I haven’t been working as a CT tech for a few months as we were getting settled in our move to Texas. So it was time to get back out there! I decided to work PRN, which is one of the perks in working in healthcare, so I still have time to work on my blog and spend time with the fam.
Blackberry Mint Sangria
I have been craving sangria ever since the weather started warming up. Nothing like a large glass of refreshing sangria loaded with fresh fruit and mint on a gorgeous day!
At first I was going to add a citrus vodka to the drink, but as is turns out the new area we live in is a “damp” town. What the heck does that mean… Well, we learned you can only buy beer and wine in the town we live in. If we want liquor we have to travel to another town. Good thing the hubby and I only really drink beer and wine!
Now back to the sangria… Since the vodka idea didn’t work out I found some triple sec left over from the move so I used that instead. I had used triple sec in my Summer Strawberry Rosemary Sangria from last year so I figured it would work. And boy it did! Cheers!
- 1/2 cup water
- 1/4 cup honey
- 1/4 cup fresh mint leaves, lightly muddled
- 1 cup blackberries
- 1 bottle of your favorite red wine
- 1/3 cup triple sec
- 1 lemon, sliced
- 1 lime, sliced
- Additional blackberries and mint for garnish
- In a saucepan add water, honey, mint, and 1 cup blackberries. Bring to a boil and then lower heat to a simmer. Simmer for about 10-15 minutes until blackberries are softened and mint is infused.
- Strain the liquid very well reserving the juice. Discard the seeds and mint. Pour into a large pitcher and add red wine, triple sec, lemon and lime slices. Refrigerate for a few hours.
- Serve over ice and garnish with additional mint and blackberries.
Breakfast Taquitos
Happy Cinco de Mayo! Not that I need a reason to eat Mexican food, my absolute favorite, I made these fantastic Breakfast Taquitos to celebrate. They may be called “Breakfast ” Taquitos, but you really could eat them any time of day.
These take a little prep time so next time I think I will double the batch. Then freeze the extras for later in the week when my cravings for these little buggers kick in… That is if there are any extras left 🙂
These would also taste great topped with my fresh homemade salsa!

- 8-10 corn soft tortillas
- 3 large eggs scrambled
- 6 ounces Italian sausage, crumbled
- 1/4 cup tomato, diced
- 1 avocado, seeded and diced
- 1/2 cup shredded sharp cheddar cheese
- Preheat oven to 425 degrees. Line a baking sheet with parchment paper and set aside.
- Place tortillas in microwave and heat for about 15-20 seconds to warm. Working one at a time, place eggs, sausage, tomatoes, avocado, and cheddar cheese in the center of each wrapper. Careful not to overfill.
- Roll tortilla and place seam side down onto baking sheet. Bake for 12-15 minutes or until crisp.
- Serve immediately.
Chicken Quinoa Enchilada Bake
I know, I know, I have yet another quinoa recipe. I bought this huge bag at Costco and I haven’t even made a dent in it. Good thing the fam loves the stuff! Annnd it just so happens to be Cinco De Mayo next week so I was thinking Mexican.
This is an awesome week night recipe and leaves plenty of leftovers for lunch the next day. And my favorite part is I only used one pan for this dish! I have mentioned before how much I loooove my Lodge cast iron skillet, but it truly is one of my favorite pans. It’s inexpensive, durable, and goes from stove top to oven.
Back to the Enchilada Bake… The recipe is pretty basic so feel free to add any of your favorite toppings!
- 1 cup quinoa, cooked according to package directions
- 1 small onion, diced
- 1 sweet pepper, diced
- 1 clove garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 lb chicken, cut into bit sized pieces
- 2 cups enchilada sauce
- 1/2 cup cheddar cheese
- Optional Toppings
- diced avocado
- diced tomatos or salsa
- green onion
- cilantro
- greek yogurt
- jalapeño peppers
- Preheat oven to 350 degrees.
- In a large skillet heat 1 tablespoon of oil over medium high heat. Add diced onions and peppers and sauté for about 3 minutes.
- Add minced garlic, chili powder, cumin, and chicken. Saute until chicken is cooked and not longer pink about 8 minutes.
- Add cooked quinoa and enchilada sauce and mix until combined. If you have a oven proof skillet top with cheese and bake for about 10-15 minutes until cheese is melted and bubbly. If you do not have an oven proof skillet and mixture to a lightly greased casserole dish, top with cheese and bake.
