Hope y’all had a fantastic holiday! We sure did! It was nice and quiet this year with just my little fam and some friends from out of town. We got one tree up and the outside of the house decorated for Christmas. So we were productive too. Yay us!

Black Bean Chili with Acorn Squash and Toasted Pepitas
Hope y’all had an awesome Halloween! We sure did! We had some friends over for a light dinner. I made this Pumpkin Soup and this Pomegranate Cashew Arugula Salad with Balsamic Dressing and homemade Mac and Cheese. With our bellies full we were ready to hit the neighborhood for some serious trick or treating! The kids ended up lots of treats and the parents enjoyed some wine and good conversation. It was a great night!

Quinoa Crusted Chicken Parmesan
Ahhhh! It’s back to school time! As much as I love summer vacation I really needed to get myself back on a schedule. We had such a fantastic summer visiting our family and friends in Pennsylvania. We did so many fun things and of course went my favorite place on earth, the beach! I hope you all had as great as a summer as I did!
I LOVE MEATBALLS!
Every time I post a meatball recipe I get such great feedback from so many of you. They always seem to rank right up there my most popular recipes. I guess it’s true that people really do love their meatballs.
I’ve tried to decide which I like the most and I just can’t seem to pick one. I always seem to change my mind each time I try the next one. My husband Eric loves anything spicy so he’s completely torn between the Buffalo Chicken Meatballs and the Asian Chicken Meatballs.
If you’re a fan of meatballs and haven’t tried these yet, I highly recommend trying them all. I’d love to hear from you which one you choose as your favorite.
