Hope y’all had a fantastic Easter. We sure did! We had a delicious brunch, where we totally pigged out, followed by the hot tub, a family movie, and puzzles. It was definitely a long overdue day of relaxing!

I’m sure by now you have all figured out that I love to make foods in a muffin pan. They look so darned cute and usually, and I use that term loosely, helps me with portion control. Umm, let’s just say these hash browns got totally out of portion control! I could not stop eating them!

Hope y’all had an awesome Halloween! We sure did! We had some friends over for a light dinner. I made this Pumpkin Soup and this Pomegranate Cashew Arugula Salad with Balsamic Dressing and homemade Mac and Cheese. With our bellies full we were ready to hit the neighborhood for some serious trick or treating! The kids ended up lots of treats and the parents enjoyed some wine and good conversation. It was a great night!
