Blackened Chicken Gumbo
This is my first attempt at making gumbo and I think it turned out pretty darn good! I had originally made this recipe for Simply Organic’s Cajun style recipes and I just had to to share it with y’all. I made this recipe using chicken and sausage, but I think shrimp or ham would also make a delicious addition.
Fiery Shrimp Jambalaya
Hope y’all had a fantastic holiday! We sure did! It was nice and quiet this year with just my little fam and some friends from out of town. We got one tree up and the outside of the house decorated for Christmas. So we were productive too. Yay us!
Stuffing In A Bundt Pan
Happy Thanksgiving week all! Sorry this post is so late. I had full intentions of posting this recipe last week and things just got crazy. Tis the season!
Even if you have already gotten your ingredients for Thanksgiving stuffing, no worries, you can still make this recipe and bake it in a bundt pan. Any stuffing recipe will work I would just add an additional 3 eggs to your recipe to ensure the stuffing stays moist. Continue reading Stuffing In A Bundt Pan

Black Bean Chili with Acorn Squash and Toasted Pepitas
Hope y’all had an awesome Halloween! We sure did! We had some friends over for a light dinner. I made this Pumpkin Soup and this Pomegranate Cashew Arugula Salad with Balsamic Dressing and homemade Mac and Cheese. With our bellies full we were ready to hit the neighborhood for some serious trick or treating! The kids ended up lots of treats and the parents enjoyed some wine and good conversation. It was a great night!

Green Chili with Chicken
It’s fall ya’ll! And it’s chili month over here at Kim’s Healthy Eats. I had originally created this recipe for my friends over at Simply Organic, but I decided it was too good not to share with all of you!
Some of my favorite things about this chili recipe is that it doesn’t take long to cook, it can easily be made in one pot, and tastes absolutely delish. Continue reading Green Chili with Chicken
Twelve Stones, Loved It!
This past weekend we had family visiting our new home here in Flower Mound, TX. It was really great to see everyone and the kids had a blast. It’s been such a big change moving our family away from everything we’ve ever known.
Saturday night was adult night out on the town so of course we had to find a place to have a nice dinner since we wouldn’t have the added stress of keeping the kids happy while we eat. I chose to take them to Twelve Stones since I heard so many wonderful things about it, it was nice and close to home and let’s face it, I personally really wanted to go there finally. 🙂
Let’s just say they met all expectations! The service was top notch and the food was absolutely delicious. It was a perfect TX evening so of course we had to sit outside. Continue reading Twelve Stones, Loved It!
