I still have soooo many tomatoes growing in my garden. Not that I am complaining… I am going to miss them so much in the winter. Ugh! Did I just say winter? Sorry, I will not say that word again.
It makes me so happy to step out into my back yard and have so many fresh veggies growing in my gardens. I have four raised beds that I grow tomatoes, herbs, cucumbers, squash, and peppers.
My husband went a little crazy on the pepper plant purchase so we have six pots of all sorts of peppers growing on the patio. We never grew peppers in pots before and it worked surprisingly well.
Bruschetta is so easy to make and tastes yummy on just about anything. I topped it on a grilled baguette, but it would make a great topping for chicken, fish, or pork.
Ingredients
- 2 cups tomatoes, sliced (I had yellow and red grapes)
- 2 cloves garlic, minced
- 10 basil leaves, chopped
- 2 tablespoons balsamic vinegar
- 3 tablespoons olive oil
- Salt and pepper to taste
- 1/2 baguette
Directions
- Heat a small skillet heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté for about 1 minute. Remove from pan to cool.
- In a bowl add tomatoes, sautéed garlic, basil, balsamic vinegar, olive oil, salt and pepper and gently combine. Set aside.
- Slice baguette on an angle. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add baguette slices and grill on each side until nice and brown about 3 minutes per side.
- Top grilled baguette with bruschetta and and serve.
