This is my first attempt at making gumbo and I think it turned out pretty darn good! I had originally made this recipe for Simply Organic’s Cajun style recipes and I just had to to share it with y’all. I made this recipe using chicken and sausage, but I think shrimp or ham would also make a delicious addition.
Blackened Chicken Gumbo is an easy weeknight dinner or it would be great dish for game day. You could easily prepare it and toss it in the crock pot to keep warm. Serve with a side of rice and viola, dinner is served!

Ingredients
- 1 pound andouille sausage, sliced
- 1 pound chicken breast
- 1 tablespoon paprika
- 1/2 tablespoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon coriander
- 1/4 cup flour
- 1 green bell pepper, diced
- 2 celery stalks, diced
- 1/2 onion, diced
- 2 tablespoons tomato paste
- 2 cups chicken broth
- 1 15 ounce can of diced tomatoes
- Simply Organic Gumbo Base
Instructions
- Preheat oven to 375 degrees.
- Heat 1 tablespoon of oil in a large pot over medium high heat. Add sliced sausage and saute until browned. Remove from pot and set aside.
- Add the paprika, cumin, garlic powder, and coriander to a small bowl and mix.
- Pound chicken breast to at least 1/4 inch thick. Rub and press seasonings into chicken.
- Add 1 tablespoon to large pot and add chicken. Cook chicken about 4 minutes on each side or until no longer pink. Remove chicken from pot and cut into bit sized pieces.
- Add 3 tablespoons of oil to pot and heat. Add flour and stir frequently for 5 minutes or until flour turns a golden brown.
- Add diced pepper, celery, and onion to pot. Saute for about 3 minutes. Add tomato paste, chicken broth, diced tomatoes, and gumbo base packet and combine.
- Gently pour gumbo into a casserole dish and bake for 20 minutes or until hot and bubbly. Serve with cooked rice.
