Life has been CRAZY the last few weeks. My husband got a new job and we are relocating from the Philadelphia area to Dallas in January. We sold our house rather quickly and are currently staying with my sister and her family until the big move. Now that we are getting settled I can get back to my blogging 🙂 I missed it and I am glad to be back!

Gluten Free Zucchini Bread
It’s officially the Christmas season! Time for some delicious baked goodies.  As I have mentioned in the past I am not a baker. Baking requires precise measuring to get it right. I like to just throw things together… A little bit of this and a little bit of that and viola, dinner.

Stuffing is my absolute favorite side dish for Thanksgiving! I got this stuffing muffin recipe idea from a guest on the Rachael Ray show. I loved the idea, but did like the stick of butter in the recipe. I lightened up the recipe and added fresh apples and dried cranberries.

Luckily, my mother in law had given me some fresh pumpkin that she roasted and pureed herself. While I think that tastes the best, canned pumpkin will taste just fine in this recipe if you don’t have the fresh stuff.

No Bean Turkey Veggie Chili
Chili is one of my favorite things to make during the cooler months. It is easy to make and it hits the spot on these chilly nights. I made this chili without beans and loaded it with veggies instead, then topped it with guacamole and fresh cilantro. You can easily add any toppings you like.
