Mango Cucumber Salsa

Memorial Day is coming up fast. Time for outdoor picnics and parties. If you’re looking for an easy, healthier alternative, this is it! Not only does this salsa makes a great dip, but would also taste awesome on shrimp, fish, chicken or my favorite, scallops. And the mangos are so refreshing on a hot summer day. Bring on the heat!

Mango Cucumber Salsa

Mango Cucumber Salsa

Ingredients

  • 2 ripe mangos, diced
  • 1 small cucumber, peeled and diced
  • 1/3 cup red onion, diced
  • 1 jalapeño, diced
  • 1 lime, juiced and zest
  • 2 tablespoons fresh cilantro, chopped

Directions

  1. Add all ingredients to a large bowl and mix together.
  2. Serve with chips or use as topping to seafood or chicken.

Doesn’t get any easier than that!
