I can’t believe it’s almost Labor Day! Where the heck did summer go? I am so bummed it is almost over. I’m still trying to hang on to the last few dog days of summer. So this is exactly why I made this beautiful salad. It is screaming summer!

Recipe from How Sweet It Is
Pasta Salad Ingredients
- 1/2 pound pasta, rigatoni or ziti
- 2 ears of corn, husked
- 2 peaches, sliced in half with pits removed
- 1 tablespoon olive oil
- 2-4 heirloom tomatoes, cut into wedges
- Salt and pepper to taste
- 4 ounces feta cheese, crumbled
- 4 green onions, sliced
- 4 slices of bacon, cooked and crumbled
Vinaigrette Ingredients
- 1/2 cup fresh basil leaves
- 2 tablespoons red wine vinegar
- 1/3 cup olive oil
- Salt and pepper to taste
Pasta Salad Directions
- Bring a large pot of water to a boil. Cook pasta according to directions and set aside.
- Preheat grill to medium high heat. Brush the corn and peaches with olive oil and place on the heated grill. Grill peaches for about 2 minutes per side. Rotate the corn until grill marks appear and kernels are a nice golden color. Remove from the grill and add salt and pepper. Cut the corn off the cob. Set aside.
Vinaigrette Directions
- Add basil and vinegar to a food processor or blender and process until combined. Stream in the olive oil and puree. Add salt and pepper.
- Add pasta to a large bowl and pour in the vinaigrette. Gently stir until pasta is coated and add the tomatoes, peaches, and corn. Add feta, green onions, and bacon, mix until combined.
