Right now produce stands are exploding with fresh peaches! I couldn’t resist so I bought a big basket of those beauties. So some recipe creativity was in order to make use of all of these peaches.

Earlier this week I made Grilled Peach and Heirloom Tomato Pasta Salad with Basil Vinaigrette, which was amazing! And last night I quickly threw together this peach salsa and topped it on grilled pork chops.

Delish and simple! Now that is my kind of meal!

Grilled Pork Chops with Fresh Homemade Peach Salsa

Ingredients for the Salsa

  • 2 large peaches, diced  
  • 1/2 red onion, diced
  • 1 jalapeño, diced
  • 1 juice of a lime
  • Handful of cilantro, chopped
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Ingredients for the Pork Chops

  • 2 pork chops, I like the bone in they are much juicier
  • Salt and pepper

Directions

  1. In a bowl combine all ingredients for the salsa and put in fridge. This can be made a day ahead and stored in the fridge.  
  2. Pre heat grill to medium high heat. Grill pork chops for about 5-6 minutes per side depending on thickness.  
  3. Let cooked pork chops rest for a few minutes and then place on a plate and top with salsa.
